So it's been a minute (or a few weeks) since my last post. I had gotten all gung ho and enthusiastic and then King killed three more chickens. I didn't want to write because while I wanted to cover a variety of topics, I had already said so much about my chickens. Althea still lives on and is tucked away at a friend's but I had to say goodbye to Thelma and Louise and my beloved Cleopatra. She was the sweetest chicken and so beautiful. If I held her she would sit in the palm of my hand. This was no small feat for a 5+ pound chicken. I loved how calm she was, although she did like to peck at my nose, presumably to get a nip at my shiny nose ring.
In the meantime I've still been doing some cooking and baking, but I was slow to start at first, partly because I was worried I would run out of delicious eggs. Of course my neighbor Jan, who is caring for Althea, has been generous enough to give me eggs and thoughtful enough to even drop some off on Sunday. So when she did, it gave me the perfect excuse to do some baking. While perusing some recipes, I came across one for pineapple upside down cupcakes and I had to try it out. While it calls for a cake mix, which I usually avoid, I decided rules are meant to be broken. Since I had some other things I needed to take care of and wanted to do some planting, I also allowed myself to use canned pineapple and oh-so-not -natural maraschino cherries. They came out pretty good and were even yummier the next day.
I had some left over butter because I only made 18 cupcakes since I have one 12 cupcake and one 6 cupcake pan but they weren't too big even though the recipe says it makes 24. I used the smaller can of pineapple and it was ok, but I think it might be nice to have the 20 oz can. They have kept well the last couple of days and it seems like they are a longtime favorite so many so give 'em a try!
More from me later-I'd like to work on some posts about other types of natural living like natural household cleaners and personal care products. Hopefully I'll be back sooner rather than later this time. Stay tuned.
